There are many ways to prepare and cook delicious Great Southern Marron.  The most important of course is freshness.  To ensure peak freshness our marron are harvested and dispatched alive and pot ready the same day, They are delivered in a chilled esky cooler and we guarantee they will arrive in tip top condition.
PREPARATION AND COOKING
Prior to cooking they should first be humanely sent to that beautiful marron farm in the sky.  Simply place them in a plastic bag and pop them in the freezer for at least an hour but no more.  You do not want to freeze them. This puts them to sleep and in this state can be placed in a pot of salted boiling water.  As soon as they turn red allow a minute or two extra cook time and then remove from the pot and immediately plunge into iced or cold water until they are just warm.  You can then split them lengthwise to BBQ or a hot grill oe alternatively remove the tails and cook separately depending on your recipe.
